How To Make A Delicious And Easy Summer Pasta Salad

 

 

 

Summer means easy pasta salad to me…. I don’t know about you but in the hot summer, the less I have to spend in the kitchen near the hot stove, the better. I like to make meals that are not only simple, but that take advantage of the fresh summer produce. This easy summer pasta salad is one of our favorites.

 

If you have a garden, or like to visit the local farmers markets, you’ll love making this yummy dish. It’s one of our family’s favorites. It goes perfectly with any grilled meat or as a stand alone dinner. It’s also perfect for packing in little jars or containers and taking to the beach or a picnic. 

This is also one of those recipes with lots of wiggle room.What I mean is pick your favorite vegis or what you happen to have o hand and add the amount that sounds good to you.

 

 

Ingredients:

  • Shell pasta (or your favorite shape) I used half a box, cooked and cooled
  • 1/2 cucumber chopped
  • 1/2 bell pepper chopped ( I used orange)
  • 2 celery sticks chopped
  • 2 green onions sliced
  • handful of cheery tomatoes cut in half
  • 5-6 slices of salami chopped
  • 1/2 lemon to squeeze in juice
  • Italian dressing (store bought or homemade)
  • 1/2 t Italian seasoning
  • salt and pepper to taste
  • Parmesan cheese for garnish

 

 

Step 1

Cook the pasta according to package directions. While the pasta is cooking, chop all the vegetables.

 

 

 

Step 2

After the pasta is cooked and cooled, combine the pasta and vegetables.

 

 

 

 

 

Step 3

Add the dressing, lemon juice and seasonings to the salad and mix well.

 

 

 

 

Step 4

Serve pasta and garnish with Parmesan cheese….Enjoy!
