Recipe For The Easiest And Best Caramel Corn

 

I have a question for you…is there one treat that gives you a nostalgia and comfort? For me, it’s my sweet mother-in-law’s caramel corn. This recipe is so special and I’m honored to be able to share it with you. The first time I had this yummy treat my husband and I were dating and  I attended a family party. Ever since, whenever our family shares this special recipe we are reminded of her kind and generous spirit, her love for her family and the joy she brings to any room. This post is dedicated to her and her positive spirit and continued support and encouragement she gives our family…might I add she’s 93 years young and you would never know it! I hope you love this amazing caramel corn recipe. 

 

Food always seems to be associated with wonderful memories. Times when we gather and enjoy the same traditions and flavors. This treat is one of those special memories for me and I’m so happy to be sharing it here. I’m officially naming it Venice’s amazing caramel corn.

 

Ingredients: 

*Recipe makes a huge batch so you can half the recipe if you have a small crowd to serve.

  • 2 cups of un popped corn or 4 pkgs microwave popcorn
  • A (1 lb) pkg of brown sugar
  • One stick of butter or margarine
  • A cup of white Karo syrup
  • 1 can Eagle Brand Sweetened Condensed Milk

 

 

 

Step 1

First, add and combine sugar, butter and Karo syrup in a heavy sauce pan. Then, let the ingredients come to a boil.

 

 

Step 2

After the mixture comes to a boil, add 1 can of Eagle Brand milk. Be sure to stir it well.

 

 

 

Let ingredients boil. Stir often and don’t have heat too high it scorches easily.

 

 

Step 3

Pop the corn while waiting for the ingredients to boil. I like to sift through the popped corn and remove un popped kernels.

 

 

Step 4

Once it comes to a boil, watch for it to get to the soft boil stage. You can drop some into cold water when it forms a nice soft ball it’s done.

 

 

 

 

Step 5

Finally, pour the caramel over the popped corn and mix well. You can make balls or leave it in a large bowl.

 

 

Enjoy this gooey, sweet comforting treat! Hope you like it as much as we do…..

 

 

If you have some left over, you can place it in a large plastic bag to keep a few days. But it probably won’t last that long! You an also make them into balls and individually wrap for a fun giveaway treat.
