Got zucchini? Well if you have a plant in your garden no doubt you have a lot. Those plants just don’t quite and you can get overwhelmed with what to do with it all. How about some bread? Y’all this is the best zucchini recipe and so easy to make. You can even freeze it to have throughout the winter. They also make great Christmas gifts in mini loafs. Our family loves this zucchini bread and it’s so delicious for breakfast and makes a great dessert- plus you feel kinda good cause the family is getting some vegetables right? I’ll go over the details but there is a printable recipe at the end of this post.
Ingredients:
3 eggs
2 cups sugar
1 cup oil
3 cups flour
1 tsp baking soda
1/4 tsp baking powder
3 tsp cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1 tsp salt
3 tsp vanilla
2 1/2 cups shredded zucchini
Step 1
Combine and beat the sugar eggs and oil until blended
Step 2
Combine the dry ingredients
Then add the dry ingredients to the egg, oil, sugar in the mixer.
Step 3
Add the shredded zucchini and vanilla and mix well.
Then pour into 2 greased and floured loaf pans
Bake for 1 hour. Slide a knife in the middle to test if bread is done. If knife pulls out clean, its’ perfect.
We love to serve ours warm with butter but its perfect cold too. It makes a wonderful gift too. You can make several loaves and wrap in foil and a freezer bag and freeze until ready to eat. You can also shred and pre measure all your zucchini and freeze it for future use.
