How To Make The Best Stuffed Poblano Peppers

“Get in my belly!!!” That’s what you will be saying when you make these delicious peppers. This is one of our family favorites in the summertime. I can’t take one bit of credit for this yumminess, it’s all Mr. Hip & Humble Style. He has perfected this recipe and he said it was ok to post them. I keep teasing my Instagram followers with pictures of them so I need to share this amazing poblano pepper recipe! Stuffed Poblano Peppers

Ingredients:

  • 1Tbsp vegetable oil
  • 1lb ground beef
  • 1 small or 1/2 medium white onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 1/2 tsp salt
  • 2tsp mild chili powder
  • 1 cup frozen corn
  • 4 Tbsp Salsa Verde
  • 3 Tbsp cilantro chopped
  • 2 Poblano peppers, cut in half seeds removed
  • 2 Cups grated Monterey jack cheese

First pre heat the grill on high.

 

 

Cut your peppers in half and remove the seeds. Then soak them about an hour in a bowl of ice water. This takes some of the intense heat out of the peppers.

 

 

Next chop up the onion and cilantro and set aside. 

 

 

Make sauce by combining the garlic, salt, chili powder, corn  and salsa. mix well and set aside.

 

 

Place onions in hot skillet and cook until translucent and lightly browned. Remove and set aside.

 

 

Then cook beef in the hot skillet. While beef is cooking add peppers to the grill cut side down 2-4 minutes until soft, remove and set aside.

 

 

 

 

Once beef is browned, add the onions. Then add your sauce mixture and corn. COok an additional minutes

 

 

 

 

Once mixture is finished cooking remove from heat. Stuff the peppers with the beef filling. Then top with cheeses and cilantro.

 

 

Place peppers back on the grill whole side down and cook until the skins are lightly charred.

 

 

Remove from heat, serve and enjoy.

Stuffed Poblano Peppers

Prep Time 15 minutes
Cook Time 25 minutes
Total Time 40 minutes

Ingredients

  • 1 Tbsp vegetable oil
  • 1 lb ground beef
  • 1/2 medium white onion finely chopped
  • 2 garlic cloves finely chopped or minced
  • 1 1/2 tsp salt
  • 2 tsp chili powder
  • 1 cup frozen corn
  • 1/2 can black beans drained
  • 4 Tbsp salsa verde or tomato salsa
  • 3 Tbsp cilantro chopped
  • 2 Poblano peppers cut in half, seeds removed
  • 1 cup grated Monterey jack cheese
  • 1 cup mild cheddar cheese

Instructions

  1. preheat outdoor grill on high
  2. next make your sauce mixing garlic, salt, chili powder, and salsa verde in a bowl. mix well and set aside.
  3. add onions to hot cast iron skillet and saute until transclucent and lightly browned
  4. remove oinions from skillet and set aside
  5. add ground beef to skillet, cook until browned.
  6. while beef is cooking, place halved peppers on the grill cut side down 4- 6 minutes. remove the peppers and set aside .
  7. drain beef then add onions, frozen corn and the mixture from above to the beef. stirring the mixture frequently as it cooks (10- 15 minutes)
  8. spoon beef mixture into the poblanos, top with cheese and cilantro and place back on the grill whole side down and grill for 8-12 minutes until peppers are lightly charred and softened.
  9. remove from heat and enjoy!!
